It is a mince of liver, spleen, kidneys, lungs, tender belly fats and bloody meat, cured and salted, wrapped in the “mesh” (anatomically that part of the peritoneum called omentum) of the pig itself; it is always consumed after cooking, fresh or maximum after a week, stored in the fridge or under lard.
