Almond cake

Ingredients
6 whole eggs,
250 g of sugar,
250 g of almonds,
1 sachet of vanillin,
½ small glass of rum or grappa,
the grated peel of 1 lemon and 1 orange,
30 g of breadcrumbs.
Introduction
The cultivation of almonds is not a typical activity of our region, but this fruit has always been used in pastry in various preparations where almonds, sweet or bitter, are now one of the bases of recipes, rightly or wrongly, considered typical. The 'Almond cake' is an example.
