350 g of type 00 flour,
2 eggs,
1 small glass of milk,
100 g of raisins,
the rind of 1 lemon,
50 g of bitter cocoa,
1 small glass of rum,
1 teaspoon baking soda,
salt.
Typical Viennese cake, much loved in Trieste, the cuguluf probably owes its name to the conical shape reminiscent of the friars' hood (gugel in German). In the middle of the dough, cocoa is added, alternating the white and brown layers. At Christmas a small gold coin was inserted, a good luck charm for those who found it in the slice.
