Marinated trout fillets
Region: Friuli-Venezia Giulia
Ingredients
8 ready-made salmon trout fillets (without skin and bones),
2 tablespoons of chopped aromatic herbs (thyme, marjoram, savory, dill, chervil, a little garlic),
10 crushed black peppercorns,
the juice of 2 lemons,
salt,
1 tablespoon of brown sugar.
Introduction
The salmon trout fillets, pink and fragrant, thinly cut, are perfect on toasted bread with butter. It would be ideal to pair it with a slightly salted alpine butter, so to enhance the delicate flavour of the fish to which the accompanying herbs give a pleasant colour.
