'Carsoline' fried chicken

Ingredients
1 chicken cut into pieces,
3 eggs,
100 g of type 00 flour,
1 cup of breadcrumbs,
frying oil,
salt,
pepper,
2 lemons.
Introduction
The secret of the success of the dish is to soak the chicken (which must be crisp) in lemon juice for an hour (alternatively you can simmer in milk for a quarter of an hour): both operations allow to eliminate any blood residue near the bone. It is the typical dish of the outings on the Karst.
