Guinea fowl with beer

Ingredients
1 guinea fowl weighing approximately 1 kg already cleaned,
1 cup of beer,
½ glass of extra virgin olive oil,
2 slices of lard,
1 carrot,
½ onion,
1 coast of celery,
4 leaves of sage,
salt,
pepper.
Introduction
The guinea fowl is a galliform that presents with a horn and two fleshy lobes in the back of the jaw. Despite the pompous name (hen of Numidia or of Carthage), its plumage is of a modest grey colour dotted with white. It is a gregarious and quiet animal that does not cause damage to the crops, on the contrary it cleans the soil from larvae and harmful insects.
