Veal croquettes and brains
Region: Friuli-Venezia Giulia
Ingredients
600 g minced veal pulp,
200 g of veal brains,
2 eggs,
1 tablespoon chopped parsley,
100 g of breadcrumbs,
1 litre of frying oil,
salt,
pepper.
Introduction
The brain, the marrow, the "head", the sweetbreads, all the entrails, meats of weaving different from that of the muscle, are indicated with the name "alternative cuts". Widely used once by the poor kitchen (for the usual principle that nothing is thrown edible) are today considered delicacies to be rediscovered.
