Ingredients
1 kg of porcini or prairie mushrooms,
1 litre of vinegar,
the juice of 1 lemon,
2 litres of extra virgin olive oil,
10 grains of black pepper,
salt.
Introduction
The delicacy and fragility of freshly harvested mushrooms recommend the method of preservation in oil. With this procedure, when the pot is opened, the mushrooms will still be of firm flesh and above all tasty. Also important in this case is the choice of the oil that must be an extra-virgin olive oil, possibly with low acidity.
