The Jamar is a cheese with a rough crust, brown, with an intense aroma.
It is a semi-hard cheese, crumbly, sometimes blue-veined, with intense and persistent aromas reminiscent of the environment where it is refined: the cave. The characteristic flavor of Jamar collects the fragrance of milk and takes on strong and spicy contours.
The ripening takes place in a karst cave, 70 meters deep, near the farm (Zidaric).
It is excellent at the table combined with local honey, while in the kitchen lends itself to various fantasies, giving the dishes a specific taste, decided, unique. (Zidaric)
