The treasure of every land is the history of its products
Amâr de Clevo is obtained by macerating some herbs. It is a solubilization operation consisting in treating with water or alcohol at room temperature some substances in order to extract their bitter properties, which give the bitter taste. The period of maceration varies from few days to many months (in our case about two months) and afterwards the pressing is done, that is a "squeezing" of the mixture which is finally filtered.
The ingredients of this liqueur are water, food-grade ethyl alcohol, brown sugar, caramelized sugar and bitter medicinal herbs (which are not fully enumerable as the recipe is secret), including gentian, mountain pine buds, valerian and other mixed plants that come from these places where pollution has not yet arrived, but ecosystems are threatened by rising global temperatures. Gentian includes about 400 species.
