Bisato in spèo is a typical dish of the area of Marano Lagunare, which tradition wants to be prepared with wisdom and slow cooking on low coals. The Bisato, which in Italian is called Anguilla, is a fish found in the valleys of the lagoon of Marano and Gradese. Bisato in spèo is a very popular dish and it is customary to accompany it with "Merlot" or "Refosco dal peduncolo rosso" wine, produced in the areas near the lagoon.
