Sardòni in savôr

Ingredients
400g of Sardòni (Anchovies),
3 onions,
400g of extra virgin olive oil,
1 glass of vinegar,
salt,
a few bay leaves.
Introduction
Savôr was invented by fishermen to preserve fish longer. Savôr recipes already exist in Venetian cookbooks dating back to the 14th century: “frizzelli in bon olio, toy uva passa e maxenala con agresta e aceto, toy cevola e lessala e battila con coltello....” [fry them in good oil, add raisins and mix with unripe grapes and vinegar, add onions, then cook and chop them...]. The word can correspond to carpione, marinade or scapece.
