'Fritole' with cream
½ litre of milk,
100 g of softened butter at room temperature,
50 g of sugar,
350 g of flour,
6 eggs,
vanilla,
salt.
For the filling:
1 litre of milk,
250 g of sugar,
2 egg yolks,
4 whole eggs,
80 g of cornstarch,
the grated peel of 1 lemon.
1 pinch of salt,
Just enough granulated sugar.
Fritole is a Trieste-based sweet: it is already mentioned in a book of 1400 when they become part of the list of gifts that the Municipality offers to the Count of Grado. They’re getting ready for Christmas and Carnival. “Tonde e s’gionfete, par tante balete che nuda nel mar” (Round and deflated seem so many balls swimming in the sea). They are considered a homemade dessert “più vecio del cuco” (really very old), but always current.
