Grandma Cecilia's apple strudel

Ingredients

For the dough:

350 gr. "00" flour,

70 gr. butter,

2 tbsp. granulated sugar,

2 eggs,

½ glass of water,

1 pinch of salt.

 

For the filling:

1 ½ kg. apples,

30 gr. breadcrumbs,

70 gr. raisins,

50 gr. pine nuts,

1 knob of butter,

3 tbsp. apricot jam,

1 tablespoon of rum,

1 lemon,

1 orange,

1 level tablespoon of cinnamon.

Introduction

Grandma Cecilia's apple strudel, also called "Strucolo de pomi" is the typical Austro-Hungarian dessert that can be found in the areas of Carnia, Isontino and the province of Trieste. Quersta recipe is very interesting, because it is prepared with "Pasta matta" and as tradition dictates.
