Strawberries bavarois
Region: Friuli-Venezia Giulia
Ingredients
150 g of strawberries,
100 g of sugar,
1 sheet and ½ of fish glue,
3 egg yolks,
2,5 dl whole milk,
6 dl of fresh cream to be whipped,
1 lemon zest.
Introduction
Fish glue is an essential ingredient in the preparation of Bavarois and mousse, due to its specific thickening function. It is recommended to add it to the flavoring element and only later to the cream. The Bavarois is an ancient dessert, not native to the region, but has rightly entered the tradition of local sweets.
