'Uccelletti' of nuts
For the pastry:
300 g of type 00 flour,
150 g of butter,
30 g brewer’s yeast,
1 pinch of baking powder,
3 egg yolks,
1 egg white,
1 whole egg,
2 tablespoons of sugar,
1 sachet of vanilla sugar,
1 pinch of salt.
For the filling of:
250 g of chopped nuts,
3 egg whites,
150 g sugar,
2 tablespoons of rum,
milk (if you need to soften the filling).
The name of the recipe is one of the many definitions of affective type that mothers give to the products of their dexterity to make them more seductive in the eyes of children. It is a fairly common variant of sweets originally from the Austrian area, reworked and customized. Ideal as a snack and for tea time.
