Dumplings in Riesling sauce

Ingredients
½ litre of Riesling,
150 g of cooking cream,
2 shallots,
2 leaves of sage,
1 sprig of parsley,
100 g fresh ricotta cheese,
50 g of flour,
1 egg,
1 orange,
salt,
pepper.
Introduction
It is a delicate dish in which the flavors of sage, ricotta and orange blend with a unique aroma. Fundamental to the success of this digestible and low-calorie dish is the choice of a fresh ricotta cheese, perhaps alpine. The extra touch is given by the sauce to Riesling, a wine that has more and more fans.
