Boiled 'canocchie'

Ingredients
30 mantis shrimps,
4 bay leaves,
the juice of 2 lemons,
4 tablespoons of extra virgin olive oil,
salt,
white pepper.
Introduction
In spring, the canoce (mantis shrimps), which during the winter hide under the sand of the not too deep seabed of the Adriatic, resume its short migrations. The mantis shrimp is very fast, it manages to move its foreleg at a speed of 23 metres per second to hit and crush its favourite prey, the snail.
