Fried sole butterflies
Region: Friuli-Venezia Giulia
Ingredients
6 frozen medium-sized sole,
250 g frozen puff pastry,
6 tablespoons of fresh tomato puree,
the peel of 1 orange,
50 g of butter,
1 clove of garlic,
1 litre of maize oil for frying,
salt,
pepper.
Introduction
The sole is a versatile fish: you can grill, prepare "alla mugnaia", boil, fry. The "butterflies" of sole are therefore one of the countless methods of preparation of this fish. When buying, check that the sole has skin very close to the body and that there are no yellow spots on the edges.
