Ingredients
8 hake weighing approximately 1 kg and ½,
3 green apples,
2 leeks,
30 g of butter,
2 tablespoons extra virgin olive oil,
2 glasses of apple cider,
1 mozzarella cheese,
1 tablespoon chopped parsley,
1 lemon,
salt,
pepper.
Introduction
Merluccius is the scientific name of the hake, of the family of the Gadids living in deep sea. To ensure that the fish is fresh check that the eye is clear and detected and that the gills are moist and vermilion. The Gadidi family also owns a kind of fillet, the porbeagle (molo de parangal).
