Marinara tuna
Region: Friuli-Venezia Giulia
Ingredients
4 slices of fresh tuna,
400 g of perini tomatoes,
200 g pitted olives,
50 g of breadcrumbs,
some leaves of basil,
salt,
pepper,
olive oil.
Introduction
Until the 1950s tuna was fished along the coast of Trieste: the watchmen on high stakes warned (shout "de grassa" (it's fat) if the tuna from Panzano headed towards Trieste, "de magra" (it's lean) if they came from the opposite side) fishermen on the boat so that they could spread the "trata" (net) in the right direction.
