Marinated salmon trout

Ingredients
200 g of previously cleaned fillets of salmon trout,
40 g of sugar,
40 g of salt,
4 tablespoons extra virgin olive oil,
the juice of 1 lemon,
20 capers in salt,
1 tablespoon chopped herbs (parsley, rosemary sage, chives),
salt,
pepper.
Introduction
Salmon trout is a variant of white-meat trout, very popular and widespread in our region. The fillets are processed in a manner similar to salmon and the smoked variant is preferred by many to the salmon itself. The artisanal processing of this fish is also carried out in the hills of Friuli.
