Not only salmon. In San Daniele del Friuli, in the hilly heart of Friuli, there is a new Queen of haute cuisine. It’s called PAT (Typical Food Product): it’s a special trout, salmonata. Refined products such as trout carpaccio, trout pate, and even trout salami crown the Italian "red caviar".
