1 kg cleaned Serra fish,
1 knob of butter
00 flour,
1 small glass of Amaro del Carso,
Salt, pepper.

A very interesting and unique dish. Thanks to its tasty flesh, the Serra fish lends itself well to this recipe. Increasingly present in the waters of the Gulf of Trieste, even locals are beginning to discover this fish and its qualities.
