Boiled cow udder, with onion and mustard

Ingredients
A piece of cow udder of about 3 Kg,
1 branch of wild celery
4 leaves of sage
3 sprigs of marjoram
10 peppercorns,
salt to taste,
1 savoy cabbage leaf
1 carrot,
3 tablespoons mustard seeds.
Introduction
Cow udder is a healthy product rich in protein substances and its use in cooking dates back to time immemorial. Cow udders were prepared by farmers who could not afford to buy meat. Today: offal is considered a true delicacy.
