Ingredients
1 carrè of suckling pig weighing approximately 1,5 kg,
8 cloves of garlic,
200 g fresh capers,
4 fresh red chilli peppers,
½ litre of extra virgin olive oil,
salt,
pepper.
Introduction
The tender meat of this cut is combined with delicate condiments that exalt the taste and complement the aromas. Milk and some aromatic herbs are a well-known and appreciated variant in the preparation of pork. Of course, the better the quality of the raw materials, the better the dish will be.
