Steamed spinach, poached eggs and flaked Montasio

Ingredients
500 gr. of spinach,
4 large eggs,
half a glass of wine vinegar,
100 gr. Montasio cheese of 60 days,
4 tablespoons grated Parmesan cheese,
4 tablespoons extra virgin olive oil,
salt.
