Dandelion salad and primrose
Region: Friuli-Venezia Giulia
Ingredients
400 g fresh dandelion,
300 g fresh leaves of wild primrose,
4 tablespoons extra virgin olive oil,
2 tablespoons of balsamic vinegar,
1 tablespoon chopped chives,
salt,
pepper.
Introduction
The dandelion is a spontaneous plant widespread in Europe, well known by gastronomes for the excellent salad that is obtained from its leaves. It has always been widely used (in Friuli it is called "tale") even on the most modest tables just for the ease of spontaneous harvesting.
