The monofloral amorpha honey derives from the nectar of Amorpha fruticosa (Leguminosae fam.). It is slightly orange when liquid, pinkish when solid. Crystallisation is fine and pasty (it takes place within a few months of collection). The aroma is of medium intensity and fruity. The taste is delicate and pleasant, reminiscent of fruit jelly.
