The Karst lime tree honey derives from local lime tree nectar. This honey crystallises easily due to its high glucose content; in the liquid state, it has a light amber colour with yellow-green reflections, while in the solid state it takes a beige or ivory colour, losing the initial transparency.
The smell has a medium intensity and is well characterised, with fresh mint and balsamic notes; it is reminiscent of the scent of lime tree herbal tea. It has a sweet, slightly acid and bitter taste and is characterised by a very fresh taste of menthol and officinal herbs. The aroma is very persistent, with an aftertaste determined by the accompanying flora, mainly due to the presence of small quantities of ailanthus.
