Gubana
For the pastry:
15g of yeast,
400g of flour,
1 glass of milk,
60g of butter,
250g of sugar,
The grated peel of 1 orange and 1 lemon,
salt,
4 yolks and 1 whole egg,
1 small glass of rum.
For the stuffing:
150g of raisins,
1 ½ glass of grappa or sliwovitz,
150g of walnut kernels,
150g of peeled almonds,
30g of candied fruit,
3 dried figs and 3 dried plums,
30g of pine nuts,
30g of bitter chocolate,
25g of dry biscuits,
25g of amaretto,
40g of sugar,
nutmeg,
cinnamon.
The term guba in Slovenian means fold: since the gubana is folded on itself, probably this is the origin of the name of this typical dessert of the Natisone and Gorizia valleys. It seems that, already in Roman times, a similar dessert was prepared, made with two sheets of pastry that contained chopped dried fruit sprinkled with honey.
