250 g of eggs,
300 g of sugar,
250 g of butter,
250 g of dark chocolate,
150 g of chestnut flour,
50 g of starch.
For the eggnog sauce of Ramandolo:
125 g egg yolks,
125 g of granulated sugar,
250 g of Ramandolo wine.
The Castanea Sativa, plant of the Fagacee, is known since distant times: Xenophon in the IV century B.C. called it "tree of the bread". The presence of starch and the good caloric value (a fresh chestnut produces about 210 calories per 100 grams) have allowed a wide use in various culinary preparations, very often in the form of flour.
