Ingredients
1kg of 00 flour,
250g of sugar,
180g of butter,
6 whole eggs,
1 yolk,
1 glass of milk,
½ glass of rum or sweet white wine,
1 lemon,
80g of yeast,
salt
Introduction
“Happy Easter, happy pinza”, as our elders used to say. The pinza is, in fact, the sweet symbol of Trieste Easter - a dessert often accompanied by hot ham. As Rutteri remembers, making pinza at home it was a point of honour for housewives, starting with the first yeast in the morning and working the dough in several stages.
