Braided agnolotti

Ingredients
400 g standard 00 flour,
3 tablespoons extra virgin olive oil,
300 g fresh ricotta cheese,
300 g frozen spinach,
100 g grated aged Montasio,
6 eggs,
50 g of butter,
3 leaves of sage,
salt,
nutmeg.
Introduction
The agnolotti friulani and carnici, small or big, never provide a filling of meat. There are many varieties, especially in Carnia, although the differences between the ingredients are sometimes subtle. Similar is generally the dressing based on smoked ricotta and melted butter, often with the addition of sugar and cinnamon.
