Fish brodetto 'alla triestina'
1,5 kg of fish of your choice (scarpena, toad tail, spider, eaves, lizard),
some escape,
2 cuttlefish,
1 onion,
1 clove of garlic,
100 g of type 00 flour,
1 litre of seed oil for frying,
2 glasses of white wine,
½ glass of tomato sauce,
1 tablespoon chopped parsley,
3 tablespoons extra virgin olive oil,
salt,
pepper.
The brodetto alla triestina is characterized by the preventive frying of the fish: this allows you to use also small fish or soft meats, such as whiting and bullhead. Molluscs such as cuttlefish and caperozzoli or crustaceans such as shrimps and scampi are added. The base is enriched by the scent of parsley, thyme, marjoram.
