Salmon trout with salt
Region: Friuli-Venezia Giulia
Ingredients
1 salmon trout weighing approximately 1500 g,
2 kg of coarse salt,
1 sprig of sage,
1 sprig of rosemary,
2 cloves of garlic.
Introduction
Trout is usually not included among salt preparations, as freshwater fish are usually cooked in the oven or in a pan. In fact, the taste of the pink meats of salmon trout are enhanced with simple and "conservative" cooking, such as with salt. Once the crust is removed, the best aromas are released.
