Sea and Land sea Bass

Ingredients
1 kg. sea Bass (650 gr. net),
½ kg. Clams (250 gr. net),
200 gr. of Porcini mushrooms,
250 gr. of Pleorotus mushrooms,
60 gr. of Smoked bacon spread,
1 Clove of Resia garlic,
10 leaves of parsley,
(Total net weight 353 gr. per person),
For the fish stew:
Sea Bass scraps,
1 Carrot,
1 Onion,
1 Potato,
1 Celery stalk,
White wine as much as necessary.
Introduction
It is a dish that knows how to combine the flavors and aromas of our sea, with the fruits of our forests, in a combination that is not new in the culinary scene, but always manages to be innovative to the palates of diners.
