Tench with mushrooms

Ingredients
4 tench,
100 g of dried mushrooms,
2 tablespoons of flour 00,
100 g of butter,
1 tablespoon chopped parsley,
2 leaves of sage,
½ glass of dry white wine,
salt,
pepper.
Introduction
The tench is a freshwater fish, present in lakes and rivers of the region, especially those with slow waters and muddy bottom. Massive shape, slightly compressed in the back, small scale, rarely exceeds the 50 cm of length. It goes well with earth products, in particular mushrooms.
