Braised duck with apples
Region: Friuli-Venezia Giulia
Ingredients
1 duck already cleaned,
500 g of apples,
4 shallots,
1 clove of garlic,
1 sprig of rosemary,
some leaves of sage,
2 tablespoons extra virgin olive oil,
1 glass of dry white wine,
50 g of butter,
salt,
pepper.
Introduction
Among the farmyard animals, the duck was certainly an authoritative presence in the farmyards of most farming families. Rustic animal of modest pretensions, it grew nourishing of what it found without adding to costs for the owners. Its meats, tasty and tasty, were mostly preserved in "ont" (fat) or smoked.
