Chamois with white wine

Ingredients
1 kg of chamois meat (breast or thigh),
120 g of butter,
200 g of type 00 flour,
½ litre of white wine,
1 carrot,
2 ribs of celery,
2 onions,
4 leaves of sage,
1 sprig of rosemary,
4 tablespoons extra virgin olive oil,
salt,
pepper.
Introduction
