Pork loin marinated 'sweet smoke'
Region: Friuli-Venezia Giulia
Ingredients
1 kg of pork loin,
700 g of cooking salt,
300 g of granulated sugar,
2 tablespoons chopped herbs (sage, rosemary, chives, bay leaf),
50 g raw zucchini,
salt,
3 tablespoons extra virgin olive oil,
50 g of fresh 'latteria' cheese.
Introduction
The marinade makes the meat softer and tastier. If we have the opportunity to buy the meat from the farmer, make sure that the animal has been slaughtered and processed immediately, as the meat separated during the hot slaughter remain softer and less stubble than those processed in the following days.
