Brovada
Region: Friuli-Venezia Giulia
Ingredients
1kg of brovada (can be found ready in a bag in the best fruit and vegetable shops),
1 onion,
100g of smoked bacon (or lard),
5 tablespoons of extra virgin olive oil,
1 tablespoon of vegetable broth,
2 bay leaves,
salt.
Introduction
The “raw material” of the brovada is white turnips with purple ends. Already Apicius talked about the way to preserve turnips in vinegar by making them ferment. The term “brovada” derives from the Carnian dialect: in fact, it is in Carnia that the turnips are “blanched” for a few minutes before being placed in wooden boxes outdoors.
