Peppers' salad
Region: Friuli-Venezia Giulia
Ingredients
4 yellow and red peppers,
2 cloves of garlic,
1 sprig of parsley (or basil of your choice),
extra virgin olive oil,
salt.
Introduction
A fundamental element of any good vegetable salad, in addition to the excellent quality of the vegetables chosen, is undoubtedly the oil, possibly chosen among those with low acidity that play a beneficial antioxidant function. The best oils are those that provide for the hand harvesting of olives and the cold milling.
