Potato pancakes

Ingredients
1 kg of potatoes,
250 g of butter,
10 yolks of egg,
the grated peel of 1 lemon,
80 g flour 00,
80 g of breadcrumbs,
½ litre of extra virgin olive oil,
salt.
Introduction
The potato arrived in Europe after the discovery of the Americas (it is native to the Andes Mountains). It was mentioned by Shakespeare, so in England it must have been well known. The spread on a large scale was not easy: in Italy it was after 1700 that he realized above all the ease of cultivation of the tubers.
