The so-called “marasca” honey derives from the nectar of canine cherry or S. Lucia cherry (Prunus mahaleb), a shrub that typically grows on the carbonate substrates of the Trieste and Isonzo Karst.
Due to its high fructose content, it remains liquid for a long time; it is characterised by an amber colour with reddish reflections and a slightly bitter taste, reminiscent of the aroma of almonds.
