The Istrian (or Carsolina) lamb is raised under the mother and slaughtered mainly during the Easter period, starting from 4-5 weeks of life. It can be divided into three categories, according to the weight of the carcass:
Spring lamb: carcasses up to 10kg
Light lamb: carcasses up to 10.1-13kg
Meat lamb: carcasses over 13kg.
