Lamb loin in a crust of herbs

Ingredients
1 kg loin of lamb,
salt,
pepper,
2 tablespoons chopped herbs (sage, rosemary, chives),
80 g of butter,
10 slices of sliced bread,
2 egg yolks,
100 g grated seasoned Montasio cheese,
½ kg of potatoes,
2 tablespoons of extra virgin olive oil.
