Liptauer
250 gr of Bryndza cheese (you can replace it with sheep ricotta),
50 gr butter at room temperature
1 teaspoon of sweet paprika
chives to taste
parsley,
1 anchovy,
salt, pepper.
Liptauer is a cream of various types of cheese, enriched with aromatic herbs and paprika. It can be tasted in the taverns and trattorias of Trieste, in the classic "rebechin", the snack that people from Trieste usually have during the day. There is no original recipe, because the various versions are related to the territory, to the habits and tastes of local people, as well as to the availability of ingredients.
