Brovada soup
300 g of brovada,
250 g dried Carnia beans,
2 potatoes,
1 carrot ,
1 small leek,
1 white onion,
1 sprig of rosemary,
1 clove of garlic,
4 tablespoons vegetable broth,
4 slices of raw ham,
2 tablespoons extra virgin olive oil,
salt,
pepper.
Brovada is a typical food of Friuli, made with white rape with purple collar macerated and fermented for at least one month in acidified pomace. The turnips, that is the brovada, are then consumed raw or cooked both as a side dish of boiled meat, especially pork, and, as in the case of this recipe, as an ingredient in soups with beans, potatoes and other vegetables.
