Mixed boiled meats

Ingredients

400 g of beef pulp (breech and shoulder),

200 g of beef tongue,

300 g head of veal,

2 legs of hens,

1 cotechino,

2 ribs of celery,

2 carrots,

1 onion,

salt.

Introduction

The mixed boiled Italian DOC, according to the homonymous Brotherhood, provides seven different pieces of beef; in our region the preference goes to mixed meats such as musetto, head or leg of pork and/or veal, hen, tongue, in addition to the strong piece, a tender beef muscle. Indispensable the right sauces and salt.
